- Thinly slice the aubergine. Really thin. As thin as you can get it. Maybe use a potato peeler.
- Put the sliced aubergine in the satay marinade for as long as you can. (for satay marinade/sauce I used a mixture of peanut butter, light soy, sugar, ginger lemongrass, rapeseed oil. I'm sure you can find a recipe somewhere...)
- Cook the aubergine *gently* in a pan with some oil so that it goes soft. The aim here is just to make sure the aubergine is cooked through, but it still needs to be soft so you can fold it onto the skewers. You can also probably microwave it to achieve a similar effect.
- Let the aubergine slices cool (if you have leftover marinade, you can put them back in the marinade to cool down). Now thread the aubergine onto the skewers, folding each slice like a concertina as you thread it on. Hopefully the aubergine will be soft enough that you can squish the concertina flat, making a compact lump on the skewer. To my mind this makes it look a bit like the filthy bits of chicken that you might get from an Indonesian satay vendor.
- 10 mins before serving, get the skewers and grill them. Either on the BBQ or in the oven. Really go for it. Aim to burn them a bit. Crispy on the outside is what we want. Enjoy!
