- 1 teaspoon coriander washed and finely chopped for garnishing
- 6-7 baby aubergine washed and pat dry
- 6 baby potatoes
- 3 small onions
- 1 cup green peas
- 1/2 cup chopped tomatoes

- In a plate add almond powder, crushed Weetabix, turmeric powder, red chili powder, coriander cumin powder, garam masala, asafoetida, jaggery, ginger, garlic, chilli paste, lemon juice, oil and salt. Mix well and set aside
- Stuffing eggplants, potatoes and onions:- Wash and dry the small eggplants. Slit 3/4 length in criss cross. Stuff the prepared stuffing. Similarly peel and cut the potato and onions and stuff the filling.
- Heat oil in a pressure cooker pan. Add cumin and asafoetida. Add chopped tomatoes and add turmeric, chilli powder and salt to taste. Add the peas, stuffed eggplant, onion and potato. Sprinkle the remaining stuffing over it. Mix it very gently with a spatula and add water and bring it to boil.

- Cover the pressure cooker and pressure cook for 2 whistles and let the pressure cooker cool by itself. Once the pressure cooker is cooled, transfer the shaak in a serving bowl and garnish with coriander leaves. Serve the bharelu shaak with roti, rice, puri, bhakri, naan, etc Enjoy 😉
