  3. 160 ml water

  10. 1 TS lemon zest
  11. 1 lemon juice
  12. 100 grams pitted olives
  13. 1/2 cup toasted chopped hazelnuts and cashews mix
  14. Greek yogurt

Steps to make to make Chermoula eggplants

  1. Wash aubergines and cut in a cross cross manner like in picture and drizzle olive oil. Preheat oven on 180 Celsius degrees on fan.
  2. Chermoula paste: to make add in a bowl, grated garlic, cumin, coriander, chili, paprika, salt and pepper, lemon zest and olive oil and mix well. It should look like this
  3. Then spread the chermoula paste on top of eggplants. Cook in oven for 40 min until flesh is soft. Cut sides facing up.
  4. Once ready remove and press a bit down with a spoon
  5. In the meantime place bulgar in a bowl and cover with hot boiling water. Close the dish and leave there for at least 10. Check after a while and water should be absorbed by bulgar. Once that is ready mix in raisins, add olive oil, lemon juice, olives, nuts, thinly sliced spring onions with mint and coriander and mix well.
  6. Once that is ready, cover aubergine and add a dollop of yogurt on top. Serve with a drizzle of olive oil, add coriander add salt to taste and enjoy warm or at room temperature
