- Cut brinjal in a salt water. Keep it a side
- Take a pan add 1tbsp oil, 3-4 red chilli, chana dal 1tbsp, urad dal 1tbsp, daniya 1tbsp, sesame seeds 1tbsp, fry & roast it in a low flame until it becomes light brown colour. Off the flame and add grated coconut (dried) to it and roast it 1min. Transfer it in a mixi jar and grind it to a fine powder.

- In a pan add 2-3 tbsp of oil, let it heat add curry leaves, mustard & cumin seeds, ginger garlic paste (little), onions chopped, green chillies 4-5 let it fry 2-3 mins.
- Now add turmeric powder, chopped tomatoes, and brinjal mix it let it cook for 4-5 mins.
- After 4-5 mins add tamarind juice to cook brinjal,salt, and hing 1/2 spoon and mix it let it cook.
- After brinjal cooks add rice and mix it then add grinded powder 3-4 tbsp and mix it well
- Let it cook for 1-2 mins add add coriander leaves. Off the flame. And serve it hot.
- You can also squeeze lemon juice to taste (optional)
