  1. Wash Baingan and swipe with clean cloth. Now make several slits and insert garlic in each slit. Apply mustard oil. Put this one gas flame and roast it. Make sure it is roasted from all the sides.
  2. When it is completely roasted, removd the charred baingan and peel away the skin completely and mash it well.
  3. Take a pan and add oil. Add onions to it. Let it turn pink. Now add ginger and garlic paste. Saute for 2 to 3 mins.
  4. Now add tomatoes and cook on high flame. Add salt and Haldi. Cook till oil is released.
  5. Now add all the masalas and mix well. Add mashed Brinjal to it. Mash it well. Cook until it releases oil.
  6. Add coriander leaves to it add mix well.
  7. Serve it hot with rotis, Chappatis or hot parathas..
