Steps to make to make Undhiyo

  1. Take a bowl,add chopped washed cleaned coriander, add green chilli ginger garlic paste, sesame seed, fresh coconut, haldi,dhaniya jeera powder, garam masala and oil,salt,sugar and mix it well and keep aside.
  2. Take a brinjal,slit into 4 corner and fill coriander masala in it and keep aside, take a long green chilli slit it and fill coriander masala keep aside
  3. Take another bowl, add papdi potatoes, sweet potatoes, yam,and add all masala in it and mix it properly and keep aside
  4. For muthiya, take wheat flour, jowar flour and besan add oil add all masala chopped methi and mix it well and knead dough and fry it in a oil muthiya is ready
  5. Take a large pan, add oil and put the layer of papd mix I on it then put brinjal and muthiya on it and add again all remaining masala give a quick mix qnd let cook it on a low flame by cover the lid.
  6. Let it cook for 20 to 25 min on a low flame and mix it very lightly and cover the lid and cook on a low flame. Keep checking in between,when it is cooked garnish with fresh coriander, grated coconut sesame seed.
  7. Serve it with garam garam puri.
