  2. In a wok heat mustard oil, add panchphoron, bay leaf, whole red chilli and add first potatoes, radish and fry for 3-4 mins. Then add eggplants and cook for 2 mins more
  3. Add turmeric powder, red chilli powder, salt and mix well. Add peas and mix well
  4. Add 1/2 cup water and stir. Cover and on low flame cook.
  5. Once cooked, sprinkle garam masala powder, mix and set aside
  6. Serve with steamed rice and garnish coriander leaves. Enjoy!
