- In a suitable sufuria. Add 6 cups of cold water, 1 teaspoon of salt, 1 tablespoon of cooking oil. Heat until water boils.
- Once water has boiled reduce heat to medium then add your spaghetti cut into halves. Simmer for 10-20 minutes or until your spaghetti is soft.
- Put the boiled spaghetti water in a separate boil(we will use this water to cook the Mung beans).
- Pass your spaghetti through cold water in a strainer. Return your spaghetti in the sufuria and cover till cooking time.
- In another sufuria add 3 tablespoons of cooking oil and let it heat for about 15 seconds.
- Add your Onions cut thinly into the oil together with your ginger.
- Once you feel the aromas, add your finely chopped hope and carrots(don't add water)
- Then add your Knorr cube and cook.
- Once you smell the hoho and carrots cooking add your zucchini, eggplant and cucumber. Add the saved boiled water till it covers the vegetables. Let them cook to your preferred texture. I cooked them for 20 mins.
- Once the water has reduced add your preferred boiled green Mung beans and mix them together. Let it cook for another 10 minutes.
- Now add your tomatoes and finely chopped garlic cloves. Let this cook for another 20 mins or till the tomatoes have kufad.
- Then add your salt and the Royco cubes. Let them cook together.
- Mix everything together so as to get the tomatoes colour.
- Lastly add your finely cut fresh coriander leaves. Let it simmer for 10 mins.
