  8. to taste Salt
  9. as needed Oil
  10. For stuffing.
  11. 2 handful Red chillies..
  12. 2 tsp Dhaniya seeds
  13. 1 tsp Jeera
  14. 100 gms Groundnuts.
  15. 50 gms Chana dal

Instructions to make to make Stuffed brinjal (Gutthi vankay)

  1. Fry Red chillies,groundnuts, coriander,jeera and chana dal on low flame till nice aroma starts...
  2. Cut brinjal vertically from 4 or 6 sides, keeping the crown intact. Put them immediately in salt water
  3. Make powder/paste with the fried ingredients
  4. Add onions and tomatoes(cut into small pieces) to the grinded paste along with turmeric and salt as per taste.. Fill into brinjals
  5. Take two/three tbsp oil in a kadaai, once Oil is hot, put handful of curry leaves..
  6. Place the stuffed brinjal one by one in the oil. Roast them in low flame.. If you want add more oil u can add two more spoons.. But I prefer with less oil
  7. Add lil tamarind water if you like it to be tangy Finally, add soaked chala dal and keep a lid on the kadai so that brinjal are cooked soft
  8. Garnish with coriander leaves before serving
