- 300 gm Brinjals cut lengthwise
- 1 tsp Salt or to taste
- 1 tsp Black Mustard Seeds
- 1 pinch Asafoetida or Hing
- 3 tbsp Oil
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 2 tsp Red Chilli powder
- 2-3 chopped Tomatoes
- 2 Potatoes sliced lengthwise
- 1 small bunch chopped Coriander Leaves
- 2 Onions chopped
Steps to make to make Aloo Baingan Sabzi
- Wash and cut the Brinjals lengthwise or in cubes. Keep these immersed in salted water until ready to use.
- In a pan, heat Oil and add Black Mustard Seeds along with a pinch of Asafoetida or Hing. Let them a crackle and then saute the Onions in it until translucent. Now add the spices followed by the chopped Tomatoes. Cover and cook until soft and mushy. After about 7-8 minutes of cooking, add Brinjals.
- Cover and simmer after adding just about 1 cup of water on a low heat. It is ready in about 18-20 minutes. In between, check it at regular intervals. They should be tender and soft with most of the water dried. That's the right time to take it off the heat. It's a dry Sabzi. So saute it well. But take care not to over do it. It should have a nice semi dry Sabzi due to the presence of Onions.
- Adjust Salt according to taste. Garnish with chopped Coriander Leaves and serve hot. Yum !
