  2. 1 tsp Salt
  3. 1 tsp Ginger garlic paste
  4. 2 tbsp Oil

  7. 1 tsp Cumin powder
  8. 1/2 tsp Coriander powder
  9. 1 small bunch chopped Coriander Leaves

  1. Heat Oil in a kadai. Saute onions with ginger garlic paste. Saute it on a low flame until lightly browned and done. Now add in the rest of the spices and Saute for a minute.
  2. And add Brinjal or Eggplant pieces cut lengthwise or round whichever way you would prefer. That's perfectly okay. Mix well and add a little of water. Cover and cook until done on a low flame only. Also add Salt and Coriander along.
  3. Make an Omelette as per your choice and cut it into long strips. Add these to the kadai. Mix and that's it. Serve it well garnished with a little more of chopped Coriander.
  4. TIP- Use Salt in moderate amount. The dish has Salt in it and even the Omelette. So use it accordingly. Yum! Enjoy!
